A very
fresh egg will feel heavy. It will
immediately sink to the bottom and will lie flat on its side. The
reason is that at the large end of the egg is a small air pocket which is as
large as a dime and around 1/8th of an inch deep.

egg ages, the size of this air pocket increases as it loses both moisture and
carbon dioxide. It will begin to float and stand upright with the smaller end
lying flat on the bottom of the bowl and the broader end pointing towards the
water’s surface.

If the
egg fully floats in the water and does not touch the bottom of the bowl at all,
the egg has definitely gone bad.

Wow! Very helpful information to sis! I always wondered how to determine the freshness of things I bought in the market, meat and fish are quite easy to identify. But eggs? It was quite difficult. Now I know! =)
Oh my (egg)! I love eggs and I get my protein from it. This in informative and I'll do the test before I cook it to know if it's fresh or not.

Cool tip. I didn't know how to check a fresh egg, only until now.
I didn't know of this one. I will try to ask our egg production department what are their ways to determine that the age of the eggs.
